Tonight is dance night so we took it easy making sure Paul’s knee was going to be OK. \u00a0Cabin fever struck at about 3:00 PM so we decided to go to Coldstone Creamery and have ice cream down at the pier in Seal Beach! \u00a0It was perfect… Only 84 degrees and a slight breeze.<\/p>\n

While there we got some messages from Bridgette and Mike… They were cooking outdoors!<\/p>\n

No foolin’… Eggs in the afternoon!<\/p><\/div>\n

Note:\u00a0While light cooking will begin to destroy any bacteria that might be present only proper cooking brings eggs to a high enough temperature to destroy them all. For eggs, the white will coagulate (set) between 144 and 149\u00b0 F, the yolk between 149 and 158\u00b0 F, and whole egg between 144 and 158\u00b0 F.<\/p>\n

The eggs are in a pan, with the top on and the aluminum foil insulates the bottom of the pan and reflects the heat onto the pan… Easy to get to a40 degrees with 110 degree source!<\/p>\n

Took a while but they were delicious!<\/p><\/div>\n

After the ice cream, we headed for Old Ranch for a bit of Happy Hour… 1\/2 glass of wine each! Then home to get ready to go dancing a The Phoenix Club!<\/p>\n
