We did not have any big plans for the day so we hit the garden pretty hard.\u00a0 The corn is now gone, the asparagus is tied up, and we had a visitor. The corn was just about gone so out it went!\u00a0 We have the last six ears for lunch as dessert.\u00a0 Next year, we will be ready for more corn and will have our new tricks in hand!<\/p>\n

The garden be scalped!<\/p><\/div>\n

When the corn was removed, we saw the asparagus in the light of day… No shading from the neighboring corn.\u00a0 It is a beautiful and dainty plant!\u00a0 When the green turns brown, we will chop off the plant at the ground level, cover it in munch and await spring!\u00a0 We can hardly wait… Asparagus from the garden just tastes so much better!<\/p>\n

The elaborate raised beds are easy to see without the corn plants.\u00a0 The pumpkin is going wild in the third bed over.\u00a0 We “root” for them every morning to produce pumpkins by Halloween.<\/p>\n

Our friend and Master Gardner, Seekhan, brought us a Dragon Fruit and two Pacay pods. Inga feuillei (named after Louis Feuill\u00e9e), commonly known as pacay or ice-cream bean tree, is a tree in the Fabaceae family native to Andean valleys of northwestern South America. Pacay trees, as is the case with other trees in genus Inga, also produce pods that contain an edible white pulp and have nitrogen-fixing roots.<\/p>\n

In English they have been called “ice-cream beans” due to the sweet flavor and smooth texture of the pulp. These trees are easy to establish, spread their shade quickly, and provide fruit for years. The fruits of the trees are quite edible and are often consumed by people of regions where this fruit grows. In Mexico, coffee-plantation workers can double their annual salary by selling the pods from the Inga trees used to shade the coffee plants. In Central America, the seeds are cooked and eaten as a vegetable. In Mexico, the seeds are roasted and sold outside theaters to moviegoers.<\/p>\n
