Paul picked the tomatoes and Sue provided instructions!  While Paul was making tomato sauce, Sue made eggplant casserole. See it done.<\/p><\/div>\n<p>Once peeled, we break them into pieces and extract the seeds.  Then we put them into a colander so the water can drain out.
